These healthy sodas and carbonated, probiotic teas are so fun to make, easy, and full of possibilities!
The foundation of these beveragges is fairly simple, all you need is
A ginger bug (check out my post on making a ginger + turmeric bug)
Juice or Tea to Flavor
Sugar (If the flavoring does not have natural sugar)
Glass, airtight bottles
To make your teas or sodas, add about 1 inch of strained liquid from your ginger-but jar into each glass bottle. Add juice or tea to the bottle, leaving about 1.5 - 2 inches of head space at the top of the bottle. If the juice or flavoring that you chose to use does not have much naturally occuring sugar, add 1 tablespoon of sugar to each bottle. Honey, maple syrup and simple syrup are great options as your added sugar.
Now your bottles just need to sit and ferment on your counter, out of direct sunlight, for around 3 days. Make sure to open each bottle, each day to release any gas build-up and avoid explosions.
